Basic Italian soffrito (with 2 f’s) has onion, garlic, carrot and celery. Mince onion, carrot and celery and “soffriggere” (under cook or under-fry) in abundant best quality olive oil until the onion wilts, add the garlic until golden and then a splash of wine and stop cooking when the wine evaporates.
Basic Spanish sofrito has onion, garlic & bell pepper and often times some condensed tomato. Mince onion and pepper (generally green) and fry up in plenty of olive oil until wilted. Add the garlic – fry until golden and add the tomato. Stir and stop cooking when slightly reduced.
Puerto Ricans sometimes add a spoon of sweet paprika too.
Super fast made-in-a-blender Sofrito – one medium yellow or white onion, half a seeded bell pepper (best of roasted – you can find these in a jar at the super), 2 cloves garlic and some oregano. Blend and use as needed.
Below is a sofrito by Belina Cruz – I would add a cup of olive oil to all her ingredients instead of a tsp and add it last.

I STARTED SELLING HANDMADE OLIVE OIL SOAP AND GOATS MILK SOAP, AND DEAD SEA SALTS FROM ISRAEL AND NEAT STUFF AT LOCAL FLEA MARKETS MAKING A FAIRLY DECENT PROFIT. THIS STUPID *&^%* HAS COPIED EVERY SINGLE IDEA I’VE HAD. I WORKED HARD TO COME UP WITH THESE IDEAS AND MARKETING. SHE IS SUPPOSED TO BE 5 BOOTHS AWAY FROM ME (SHES ONLY 2) IT’S STARTING TO PI5S ME OFF. I MEAN THE PRODUCTS, SET-UP, PACKAGING, BOOTH STYLE, EVEN HER LOGO, HER GIFT SETS AND PACKS, FREE SAMPLES, BOOKING PARTIES, SELLING COFFEE, SALTS, LOTION, NEXT IS THE SOAP. EVERYTHING SHE HAS IS ALMOST A DIRECT COPY OF MINE. WHAT CAN OR SHOULD I DO ABOUT THIS??? BECAUSE I WANT TO SPRAY HER MERCHANDISE WITH PEPPER SPRAY! 1. Make sure it’s something the customer can’t already do for themselves, or can’t do it as cheaply.
2. Sell only your own original designs to avoid being reported for copyright infringement.
3. Don’t undersell yourself – charge 3 times the cost of materials, and double or triple that if it’s a unique item that nobody else makes.
4. Buy your materials wholesale whenever possible. But buy as few components as possible. Try to make all aspects of the item yourself.
5. Invest in decent packaging and bags.
6. Accept credit cards and debit cards. Don’t accept checks unless you know the person very well..
